     Italian Beef Sandwiches

Ingredients
2-3 lbs rump roast
12 oz sliced pepperochinis
1 packet Italian dressing mix
1 packet ranch dressing mix
Hoagie buns
Sliced provolone cheese
Giardiniera (Recipe found in this book)
 

Instructions
Place roast into crockpot. Drain the pepperoncini juice into a pourable container, mix in both dressing mix packets until combined. Pour over roast. Place the pepperoncini's onto the roast.
Cook the roast on low heat for 8 hours. Shred up the beef and letter simmer in the juice until read to serve. Drain and set the juice aside.
Toast the buns open face in the oven on 350 degrees for 5 minutes. Place the beef and pepperoncini's with sliced provolone on the buns and bake for an additional 3 minutes.
Serve with giardiniera. The juice from the roast can be used as au jus as well.
