     Mexican Rice

Ingredients
1 1/2 cups rice or 2 1/2 rice cooker measuring scoops
3 1/8 cup chicken broth or I measured to the 2 1/2 rice cooker line to match the rice level
4.5 ounce can tomatoe paste (I used the whole can)
3 tbsp butter
1/2 cup onion, finely diced
4 ox can diced green chilies , (we used chili powder to add flavor)
Fresh black pepper
Cilantro for garnish, optional
Salt as needed
 

Instructions
Add ingredients to the rice cooker stir well. Cook according to manufacturers instructions. Let rest for three minutes after cooking or longer to thicken and then stir. Garnish with cilantro before serving.
