6 small potatoes, peeled & cut into 1/2-inch cubes
7 Tbsps Butter, divided into 3 T & 4 T
2/3 pound leftover cooked ham, cut unto 1/2-inch cubes
1 small onion, finely chopped
3 Tbsp all-purpose flour
1 1/2 cups milk
Salt & Ground Pepper to taste
1 (8 oz) pkg shredded cheddar cheese
1/4 Cup bread crumbs, or crushed potato chips, or dried onions (optional)
Instructions
1. Place potatoes into a large pot and cover with
salted water. Bring to a boil. Reduce heat to
medium-low and simmer until tender, 10-15 minutes.
2. When potatoes are almost done, preheat oven to
350 degrees & grease a 1 1/2 quart baking dish.
3. Melt 3 Tbsp butter in a skillet over medium
heat. Add ham and onion. Cook and stir until
onion has softened and turned translucent, about 5
minutes. Remove from heat.
4. Drain potatoes and add to ham mixture. Stir to
combine. Transfer to prepared baking dish.
5. Melt remaining 4 Tbsp butter in a saucepan over
medium heat. Whisk in flour and stir until mixture
becomes paste-lie and light golden brown, about 4
or 5 minutes.
6. Gradually which milk into flour mixture. Season
with salt and pepper. Continue cooking and
stirring until thickened, about 2 minutes. Reduce
heat to medium-low and stir in cheddar cheese
until melted
7. Pour cheese sauce over ham and potatoes.
Sprinkle bread crumbs, if desired.
8. Bake 25-30 minutes, or til sauce is bubbly and
browned.
