3 green onion, green and white sliced into 1 inch pieces
2 cloves garlic, thinly sliced
1 tsp red chili flakes
1/2 lb bulk Italian sausage
1/4 cup white wine or chicken broth
1 cup canned white beans, drained
1 cup baby spinach
1 pkg (16 oz gnocchi)
2 tbspn each chopped fresh parsley and fresh basil Parmesan cheese
Instructions
Bring large pot of salted water to boil.
Heat large saute pan over medium heat. Add oil,
bell pepper, onions, garlic, chili flakes and
sausage. Cook breaking apart sausageinto bite size
pieces until vegetables are tender and sausage is
lightly browned 8-10 minutes (safe interal temp
160 degrees farenheit)
Add wine or broth beans and spnach and simmer for 2
mins.
Add gnocchi to boiling water and cook per package
directions. Transfer gnocchi to salt pan and add
about 1 cup of cooking liquid; stir to combine
well. Season with salt and pepper, to taste Divide
among 4 serving plates and garnish liberally with
Parmesan cheese. Refrigerate leftovers
