     Funeral Potatoes - Desert News

Ingredients
8 russet potatoes -
l yellow onion
3 cloves garlic
2 1/2 heaping tbs butter
Homemade condensed soup
1 cup sour cream
2 cups of sharp cheddar cheese
Salt and pepper
2 cups of cornflake cereal crushed
 
1/2 cup sharp cheddar cheese
Homemade Cream of Chicken Soup
Chicken Stock
Poultry Seasoning
Herbs.- onion powder, dried parsley, garlic powderSalt and pepper
2% milk

Instructions
Parboil potatoes in seasoned water of coarse salt and touch of garlic powder. Grate potatoes into hash browns and set aside in a large mixing bowl. Finely chop 1 yellow onion, and butter into a cast-iron skillet. On medium heat saute onions and then add the minced garlic. Add the potatoes into the skillet for 3 to 5 minutes and then remove from heat. Put hash browns and onion potato mixture into a large mixing bowl.Using a large spatual begin to add in 1 can of condensed cream of chicken soup (homemade). Add l cup of sour cream. Fold in 2 cups of sharp cheddar cheese. Sealson with salt and pepper. Mix gently until well combined. Put into backing dishand top with 2 cups of crushed cornflakes. Top with 1/2 cup of sharp cheddar cheese. Bake for 55-60 minutes.
