     Bread - Cranberry Banana Loaf

1-3/4 Cup flour
3/4 tsp. baking soda
1-1/4 tsp. cream of tartar
1/2 tsp. salt
1/3 Cup shortening
2/3 Cup white sugar
2 eggs
1 Cup mashed banana (I would add more banana)
1 Cup whole berry cranberry sauce
1/2 cup chopped nuts (we used walnuts)

Set oven to 350 deg. Combine first 4 dry ingredients together in a bowl and mix well. Set aside
Cream shortening and sugar. Add the two eggs and mix well. Alternately fold in dry ingredients, banana, and cranberries, ending with cranberries. Lastly, fold in the nuts.
Bake in prepared loaf pan (grease and flour) for one hour. Do not overbake. Let cool.
We would add more than one cup of banana, and add a few fresh or dried cranberries.
