     Asian Risotto

Ingredients
2 Tbsp. butter
2 Tbsp. olive oil
1 shallot, minced
1 cup arborio rice
3 - 4 cup broth (Thai Ginger, Miso Ginger - Trader Joe's, etc.)
Freshly grated parm
Frozen peas
 

Instructions
Melt butter and olive oil. Add shallots, cook a few minutes, until translucent. Add rice and toast, stirring continuously for 1 minute.
Add 1 cup of broth, stirring until liquid is absorbed. Repeat with remainder of broth, one cup at a time. Stir in frozen peas. Finish with grated parm.
