Melt butter and olive oil. Add shallots, cook a few
minutes, until translucent. Add rice and toast,
stirring continuously for 1 minute.
Add 1 cup of broth, stirring until liquid is
absorbed. Repeat with remainder of broth, one cup at
a time. Stir in frozen peas. Finish with grated
parm.
