     Cathy's Coffee Cake

Ingredients
2 eggs
1 - 20 oz can crushed pineapple with juice
2 c. all-purpose flour
1 c. white sugar
1 t. baking soda
1 t. vanilla extract
1/2 c. packed light brown sugar
1/2 c. chopped walnuts
TOPPING
 
1/2 c. evaporated milk
1/2 c. white sugar
1 t. vanilla extract
1/2 c. butter

Instructions
Preheat oven to 350 degrees. Mix the eggs, undrained crushed pineapple, flour, 1 c. sugar, baking soda, salt and 1 t. vanilla together. Spray Stir until combined. Spray 9x13 pan. Pour batter into pan.
Combine the light brown sugar and chopped nuts. Sprinkle over top of cake batter. Bake at 350 for 25- 35 minutes or until done.
While cake is baking (near the end of baking) make topping. Combine butter, evaporated milk, 1/2 c. sugar and 1 t. vanilla. Cook over medium low heat , stirring occasionally until sugar is dissolved. Mixture/sauce will be thin. Remove cake from over and pour topping over hot cake.
