One 15oz can CHICKPEAS - drained and rinsed

1 - 1 1/2 ROMA TOMATOES - sliced and quartered

1/2 lg CUCUMBER - peeled, sliced, and quartered

1/2 cup SWEET ONION - chopped
|
|
One 2 1/4 oz can sliced BLACK OLIVES - drained
|
|
3 oz. crumbled FETA CHEESE
|
|
2 teas dried PARSLEY
|
|
BALSAMIC VINAIGRETTE or ITALIAN DRESSING

Instructions |

|
Combine first seven ingredients. Cover and chill
about an hour.
|

Stir before serving. Serve with dressing and extra
feta on the side. A nice garlic flatbread or crusty
loaf are good pairings.

NOTE- Customize by adding bell pepper, shredded
carrot, fresh chopped cilantro, etc.
