     Red Hot & Blue Potato Salad

Ingredients
4lb red potatoes
4 large eggs
1/2 c finely chopped green onion tops
1 1/4 C Mayo
1 3/4 tsp celery seed
1 3/4 sea salt
 

Instructions
Prepare potatoes leaving them firm and set aside until cool enough to handle.
Boil eggs and when cool enough, peel.
Chop the potatoes leaving skin on and eggs in to bite size chunks.
In a large bowl, combine mayo, onions, celery seed and salt. Toss eggs and potatoes gently until well coated.
