     Aunt Sharon's Salmon Marinade

Ingredients
1/3 cup soy sauce
1 teaspoon lemon zest
1/4 cup lemon juice
2 tablespoons olive oil
2 cloves garlic
2 teaspoons dijon mustard
2 teaspoons dark sesame oil
1 tablespoon herbs
2 lbs salmon filets
 
2 lbs assorted vegetables

Instructions
Start a charcoal or wood fire, or preheat a gas grill or broiler (the rack should be about four inches from the heat source). Whisk together all the ingredients except the fish and vegetables. Cut the salmon into 1 1/2- to 2-inch cubes or large rectangles. Skewer the fish and spoon the marinade over it.
Cut up the vegetables and skewer them, if desired, and marinate with the fish. (Refrigerate, if you like, for up to 2 hours.) Grill the salmon for about 8 to 10 minutes (its center should remain slightly rare). Grill the vegetables for about the same amount of time, or until tender. Serve together.
