16 oz (455 grams) bag of broccoli or veggie slaw mix
1 tbsp olive oil
1 pound (455 grams) sea scallops, patted dry
Freshly ground pepper
Instructions
Make the dressing in a blender. Combine the avocado, yoghurt,
lemon juice, parsley, and a pinch of sea salt and blend til smooth.
Prepare the slaw by pouring the dressing over it ad tossing
together.
Sear the scallops in the olive oil over medium high heat for 1-2
minutes until browned. Remove from heat and sprinkle with pepper
and additional sea salt. Plate.
Serving
Suggestions
Side of rice or roasted sweet potatoes.
