     Fruit Pizza

Ingredients
Crust
1 1/4 cups (275 ml) All-purpose flour
1/3 cup (75 ml) Brown Sugar
3 tbsp (50 ml) Icing sugar
2/3 cup (150 ml) Butter, softened
Topping
12 oz (375 g) Cream Cheese, softened
1/2 cup (125 ml) granulated sugar
 
1 tsp (5 ml) Vanilla
Variety of fruit
Whipped cream, for garnish (or ice cream)

Instructions
Crust- Mix all 4 ingredients together in bowl until it forms a ball. Press on bottom of pizza pan. Bake in 350 F. (180 C) oven for about 10 to 15 minutes or until golden brown. Cool.
Topping- Beat cheese, sugar and vanilla together. Spread over crust. Arrange fruit in pattern of your choice over top. (You can glaze fruit if desired) Garnish around edge with whipped cream if desired.
Apricot Glaze- Mix 1/4 cup (60 ml) apricot jam or orange marmalade with 1 tbsp (15 ml) water. Rub through sieve.
