     Mexican Lasagna

Ingredients
1 1/2 lbs ground beef
1 onion diced
1 clove minced garlic
1 TBSP olive oil
3 yellow, red or orange bell peppers diced
1 can tomato paste
2 cups salsa
4 oz can mushrooms
8 oz can green chiles diced
 
4 oz ccan black olives
2 to 4 cups Mexican blend shredded cheese
flour tortillas

Instructions
In large pot heat olive oil, add diced onion and cook for five minutes until translucent Add beef and brown. Add minced garlic and cook for another minute. Add bell peppers, mushrooms, olives and green ciles and allow to simmer for 10 minutes. Add tomato past and salsa and allow flavors to mingle
In an 9 X 13 inch pan which has been greased layer 1/3 meat sauce on bottom. Top with layer of cheese, then make a layer of tortillas. Continue with layer of meat sauce, layer of cheese, layer of tortillas, layer of meat sauce. Top with layer of cheese. Set aside and allow to rest for an hour.
Bake at 350 degrees for one hour and allow to col for 15 to 30minutes before cutting. Serve with rice and beans.
