Preheat oven to 350. In a medium, bowl mix together flour, baking
powder, baking soda, cinnamon and salt.
In a large bowl, beat the butter with an electric mixer until creamy.
Gradually beat in sugars and mix until thoroughly combined. Add
in eggs one at a time, beating after each addition. Mix in vanilla.
Add flour mixture and beat on low just until combined. Stir in
chocolate chips, oats, coconut and pecans. It will no longer fit in the
kitchenaid mixer bowl when you stir in these last 3 ingredients,
Drop dough in 1/4 cup portions, 3 inches apart on cookie sheet. I used the large pampered
chef scoop.
Bake 12-14 minutes,
rotating half way through cooking time. Cookie edges should be
lightly browned. I mashed the rounded cookies with a spatula when I turned the pan. Remove
to a wire rack to cool. Use a wide spatula when removing from the pan, cookies will be very
soft until cooling.
Makes a ton of cookies. May want to half the recipe. When halving, I used 1 1/2 tsp to half 1
TB and used 2 eggs. Or drop into
balls and freeze to cook later. Just thaw overnight in fridge before baking.
