4 pieces or 2.5lbs of chicken thighs, bone in with skin
1/2c low sodium soy sauce
3/4c light brown sugar
1 bulb of garlic, finely chopped
thumb size ginger, cut into 1/2 piece and smashed
Add all the ingredients except the chicken in a large pan. Don't use a
medium size pan to give room for the sauce to boil and swirl around the
chicken. Stir to mix the sugar very well. Add chicken and coat. Cook
on medium heat for 1 to 1.25 hours until sauce thickens.
Serve with white rice and macaroni salad.
Optional Garnish with chopped green onions and
cilantro. Add some chopped Thai chili to cook in
with the chicken.
