     Fettuchini Alfredo

Ingredients
1 pkg. of fettuccine
1/4 cup reserved pasta water
2 Tbsp. (1/4) stick unsalted butter
2 garlic cloves, pressed or grated
1/2 tsp. onion powder
2 cups heavy cream
1 cup shredded Parmesan cheese
1/2 tsp. fine sea salt
1/4 tsp. freshly ground back pepper
 
Finely chopped fresh parsley leaves

Instructions
Bring a large pot of water to boil and add 1 pkg (16 ounce) fettuccine noodles (or home made). While pasta cooks, in a small sauce pan add the butter, once melted add garlic, onion powder, and whisk. Decrease the heat, Whisk in the cream and simmer on low.
Whisk in the cheese until just melted. Do not boil or the cheese will clump. Season with salt and pepper. If to thick add pasta water - one Tablespoon at a time until it has the correct consistency.
Before draining the pasta reserve 1/4 cup of pasta water. Drain. Toss with sauce. Salt and pepper to taste, and Parmesan cheese.
Serve Warm.
