     Mediterranean Zucchini Noodle Pasta

Ingredients
2 Zucchinis spiralized
1 cup grape tomatoes
3 cloves of garlic pressed
1/2 cup red onion
2 Tablespoons olive oil or more if desired
1 tablespoon lemon juice
1 cup kalamata olives rinsed and halved
1 teaspoon dried oregano
1 teaspoon dried parsley
 
1/8 teaspoon sea salt
1/2 cup feta (optional)

Instructions
Spiralize zucchini and dry off on paper towel.
Heat oil in large frying pan over medium heat. Add the tomatoes and garlic and stir until tomatoes have softened, about 5 minutes.
Add all other ingredients except the feta and zucchini. Cook another 5 minutes. At this point you can just pour the sauce over the zucchini and then top with feta or you can add the zucchini to the pan and stir around for 1 to 2 minutes to slightly soften the zucchini and warm it. Dish up to your bowl and top with feta.
Note- in the summer the sauce can be made cold by just mixing it in a bowl and pouring over the spiralized zucchini for a cold salad or meal. You will probably need more olive oil for the cold version.
