     Tuscan Tortellini Pasta

Ingredients
1 small yellow onion, diced
2 tbsp butter
6 cloves garlic, minced
1/4 cup sun dried tomatoes in oil
1/4 cup flour
1 1/14 cup chicken broth
3/4 cup heavy cream
1/4 cup parmesan cheese, grated
1/2 cup grape tomatoes, sliced in half
 
2 cups spinach
1 bag family size cheese tortellini (I used RANA)

Instructions
Heat a pan over medium heat with butter and 2 tbsp olive oil. Add onion and cook until soft. Add garlic and cook until fragrant. Add sun dried tomatoes and season everything with salt and pepper or seasoning salt.
Add flour and cook for 2-3 minutes. Slowly add in chicken broth until fully combined. Turn heat up to medium high and cook for a few minutes. Add heavy cream and parmesan cheese and cook for 2-3 minutes. Add in tortellini and cover. Cook for 4 minutes.
Stir in spinach and grape tomatoes and cook until spinach is wilted. Season with additional salt and pepper if needed.
