This was a experiment that is really good. I took
3 potatoes, peeled and shredded. Heated butter on
a flat skillet and spread out potatoes to thin
layer. sprinkle with salt and pepper. Cover with
foil so that potatoes get tender. Once tender,
remove foil and let potatoes get crispy and
browned around edges. Top with 2 eggs mixed with a
little milk and seasoned lightly with salt and
pepper. I topped it with a lot of cheddar cheese
and cooked taylor ham. Once eggs are set I folded
it over and continued to cook until I felt
everything was cooked through and then flipped it
and cooked on other side. This is not a measured
