Ingredients
Just less than 2 cups flour
2 eggs
approximately 1 T. olive oil
1/2 teas. salt
 

Instructions
Put flour on counter. Create a well in flour and put eggs and oil in the well. Whisk egg and oil together with a fork. Start to push flour into mixture and mix until all mixed, then start to knead dough. Knead in a criss cross pattern for about 10 minutes until smooth and not sticky. Form into two balls and wrap in plastic wrap. Leave to rest on counter for a couple hours.
Lightly flour counter and press out one ball at a time to thin out. Roll out with rolling pin, adding flour as needed to avoid becoming sticky. Flip over as needed and continue to roll until very thin. Fold and roll to create a sort of tube like shape. Use a chef knife or pizza cutter to cut into very narrow noodles. You can also cut into squares to make ravioli or bow ties, by pinching a square into a bowtie.
Noodles can be cooked in water, broth or a sauce. Don't over cook.
