Cook pasta in salted water to al dente stage. Drain but do not rinse.
Spread on paper towel to dry. Put equal amounts of butter and oil in
fry pan. Heat pan on medium to medium high heat, to hot, but not
browning butter. Spread pasta in pan in a single layer. Reduce heat
to medium and fry pasta about 2 to 2 1/2 minutes, pressing down with
spatula to flatten. Pasta will start to stiffen and turn golden. Flip
pasta, watching closely and cook 2 to 2 1/2 minutes longer. Let it turn
golden brown but not too dark. Put on paper towel to cool.
