Swordfish, about 1 inch thick
olive or avocado oil
blackened seasoning

Marinate fish in oil for an hour or more. Season and fry in oil and butter. Cook on medium to medium high heat until medium done, leaving some pink in center.
Very good served with cream sauce, tomatoes and capers. See cream sauce in Sauces category.
