     Baked penne vodka with burratta

1 lb penne
16oz riccotta
1/2 C grated cheese
2 C shredded mozzerella
1 large egg, salt, pepper, parsley
vodka sauce
olive oil
1 tbl crushed garlic
1/2 tsp red pepper flakes
15 oz can tomato sauce
1/2 C vodka
2 C heavy cream
1 container of burrata cheese
grated cheese

Make sauce and cool. Saute crushed garlic and red pepper flakes in about 1/4 C olive oil. Add vodka, cook down 3 minutes, add tomato sauce and cook 5 minutes, add heavy cream and heat. Season with salt pepper, basil and parsley.
Mix ricotta, mozzerella, grated cheese, egg, salt, pepper, parsley. Set aside Boil penne in salted water until slightly softened but hard to taste. It will cook more while baking Drain and rinse in cold water. Drain well. Mix into cheese mixture.
Spoon vodka sauce in 13x9 casserole dish, Spread out penne in cheeses over vodka sauce. Top with vodka sauce. Slice burrata cheese into thin slices about 1/2 inch thick and place over casserole. Sprinkle with grated cheese. Bake uncovered at 350 about 40 minutes. Let settle for 10 minutes.
