Using dough hook attachment, mix flours for a
minute. Whisk eggs in a measuring cup. Turn mixer
to speed 2 and slowly pour in the eggs. Also add
1 Tbsp water and let it mix for 1-2 minutes
Turn off mixer and using your hand try to bring
dough together into a ball. If still too crumbly
add the other 1 Tbsp of water and continue to mix
with hook. It will be crumbly
but you should be able to get 3/4 of the mixture
to come together. If not add a little more water
from wetted hands. Wrap crumbly ball in plastic
and rest for 30 minutes.
Set up desired extruder. Roll rested dough into
walnut sized balls and follow manufacturers
directions for settings to extrude the dough onto
a floured cookie sheet or cutting board.
Bring a large pot of water to a boil, salt the
water, add pasta and cook 3 minutes or until it's
floating to the top.
