Bring a pot of water to boil. Add penne pasta and
cook according to package directions.
Heat skillet to medium high heat. Cook the sausage
and chicken until crisp and done. Season with
cajun seasoning while cooking. Remove from the
pan. Add the celery, bell pepper, and onion to the
same pan, cook until soft. Add tomato paste and
mix. Stir in diced tomatoes and chicken broth and
bring to a boil.
Reduce the heat to low and add in the heavy cream.
Season with garlic salt to taste. Once it thickens
add the cooked penne pasta. Add the cheeses and stir
to combine. Add the chicken and sausage back in.
Season to taste with cajun seasoning.
