     Hearty Homestyle Salmon Casserole

Ingredients
1/3 Pkg No Yolks Cholesterol-Free Egg Noodles
1/2 Cup Water
1 Teaspoon Cornstarch
1 Teaspoon Dried Thyme
1/2 Small Onion, Minced
3/4 Cup No-Fat Sour Cream
1 Cup Shredded Carrot
1/2 Cup Sliced Celery
1 Large Tomato, Chopped
 
8 Oz Cooked Salmon
2 Teaspoons Chopped Chives

Instructions
Cook NO YOLKS according to package directions. Meanwhile dissolve cornstarch in water. Stir in thyme, minced onion and sour cream; set aside. At end of cooking time for noodles, add carrot and celery to pan with noodles.
Stir in sour cream mixture, tomato and salmon. Spoon into 2 quart casserole sprayed with non-stick cooking spray.
Bake uncovered for at 350F for 30-40 minutes or until heated through. Stir before serving; sprinkle chives over each serving.
