Marinade for steak.
1/4 c EVOO, chili powder,cumin,honey, lime juice and zest, salt and
pepper. Marinade 24 hours.
Cook- Med/high, Sear 3-4 min. Flip cook 4-5 minutes, rest 5-10
minutes.
Fries-
Cut 1/4 in strips.
1T EVOO, salt , pepper.
425 degrees, put on cookie sheet don’t crowd. Drizzle with oil,
season with salt and pepper. Toss to coat.
425 for 15 minutes. Reduce to 400 flip fries 15 more minutes.
Peppers.
Med/high heat. 1T EVOO, add peppers and salt and pepper. Cook
4-5 minutes, until soft, remove from heat.
Vinagerette- whisk together.
1/4 c EVOO, 1/4 c lime juice, 2 T fresh chopped cilantro, 1 T honey,
1/2 t chili powder
Salt and pepper
Salad
Toss lettuce, mango, jalapeño, and cilantro.
Add avacado, peppers and sweet potatoes.
Slice steak across grain, add.
Sprinkle with cheese.
