4 cloves minced garlic, plus 2 more cloves for soup
left over ham bone
For Soup -
4 slices of bacon, save grease
1 small onion, diced, 2 ribs celery, diced
14 oz can diced tomatoes
1 medium zucchini, chopped
2 carrots, peeled and diced
1 Russet potato, peeled and diced
2 large Cans Canelloni beans, rinsed and drained
1/4 tsp. dried oregano
1/2 tsp. dried thyme, 1 Tbl. dried parsley flakes
Cooked small pasta to add when serving
Instructions
Put ham bone, water or broth, peppercorns, bay leaves, and 4
cloves garlic into a soup pot. Simmer on low for 2 hours. Cook
bacon until crisp, chop, reserve 2 Tbl. grease in pan. Add onion,
celery, zucchini, carrots and potato to pan and sauté .
Remove ham bone from pot. Add ham, veggies, bacon, tomatoes,
and any remaining ingredients to the pot. Season if necessary.
Cook until potatoes are done.
For slow cooker method, put water, ham bone, peppercorns, bay
leaves and garlic into slow cooker for 7 hours. Remove ham bone.
Cook bacon. Saute veggies in bacon grease. Put ham back into
cooker with the tomatoes and sautéed veggies, additional garlic
for 2 more hours.
I used part water and part vegetable broth. We thought it was
pretty good. I cooked up some Bow Tie noodles and added them
to the soup bowls. You can also sprinkle a little Parmesan Cheese
when serving.
