Salsa & Cream
-Add the can of a tomato, some finely chopped red onion and some finely chopped cilantro to a blender and puree in a couple short pulses
-Set aside for now
-In a separate bowl whisk together the sour cream, heavy cream and a couple pinches of salt

Tortillas
-Heat the oil in a large skillet then fry the tortilla chips in batches
-Do not leave these as they will burn easily
-Switch batches out once they turn a golden brown
-Set aside and pat down dry

|
Sauce
-Add a couple tbsp of oil to a pan and fry the garlic cloves until they are fragrant and golden
-Add the salsa mixture and cook while stirring until it simmers
-

|
Combining it all
-Spread the tortillas on individual plates
-Spread the salsa mixture
-Spread the sour cream mixture
-Drizzle the dishes with the chopped tomato and onion
-Finish it off by drizzling the dishes with feta cheese
