     Rosemary Roasted Chicken w/ Mushroom-Shallot Gravy

Ingredients
1 T. chopped fresh rosemary
1 t. EVOO
1/2 t. salt
1/4 t. pepper
1 (3-pound) chicken
cooking spray
2 shallots, halved
2 unpeeled garlic cloves
1 (8 oz) pkg fresh mushrooms
 
1 1/2 T. all purpose flour
3/4 c. chicken broth
1/3 c. 2% red. fat milk
1 T. dry sherry

Instructions
Preheat oven to 375. Combine 1 T. rosemary, oil, salt, and pepper in a small bowl; stir well, and set aside. Remove and discard giblets and neck from chicken. Rinse chicken under cold water, and pat dry.
