     Caribbean Coconut Shrimp

Ingredients
3 Tbsp. olive oil
1 Medium onion, minced
1/2 Medium red bell pepper, diced
1/2 Medium green bell pepper, diced
2 Jalapeño peppers, seeded and minced*
3 Cloves garlic, minced
1 Medium tomato, diced
1 Lb. fresh shrimp, peeled, deveined and tails removed
3/4 Cup coconut milk
 
Juice of 1 lime
1/4 Cup minced parsley

Instructions
Heat oil in large skillet over medium heat. Add onion, peppers and garlic. Sauté about 4 minutes or until soft; add diced tomato, stirring to mix well.
Add shrimp; stir to coat. Cook and stir 2 to 3 minutes or until opaque. Add coconut milk and salt and pepper to taste. Transfer to serving dish. Add lime juice and minced parsley.
