     Romanian Bean Soup

2 Cups Dried Mixed Beans
8 Cups Cold Water
1 Large Onion, chopped rough
3 Carrots, peeled and sliced 1/2 inch thick
2 Garlic Cloves, minced
1 Vegetable Bouillon Cube
1 Tblespoon Butter
1 Medium Onion, diced finely
2 Teaspoons Kosher Salt
1/2 - 1 Teaspoon Ground Black Pepper

Soak beans over night in cold water. Drain and rinse beans several times.
In crockpot, place beans, water, chopped onion, carrot, garlic and bouillon, cover and cook on hight 8-10 hours. Add salt and pepper to taste.
Heat butter in skillet and add diced onion, cook until very brown.
Ladel soup into bowls and add sauteed onion
