In a large bowl, combine flour, salt, baking soda, cinnamon. Beat eggs, oil and sugar; add carrot, pineapple and vanilla. Stir just until dry ingredients are poistened. Fold in nuts. Pour into two greased loaf pans.
Bake at 350 degrees for 55-60 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves.
