     Mom's Eggplant & Shrimp Jambalaya

Ingredients
1 lb hamburger meat
1 lb shrimp
1 medium onion, chopped
2 cloves garlic, minced
1 eggplant peeled and chopped fine
1 stalk celery, chopped
1 small bell pepper, chopped
1 Tbl vegetable oil
2 C cooked rice
 
salt & pepper
red pepper
parsley
crab boil

Instructions
Peel shrimp, set aside. Simmer shrimp shells in about 4 C water with 2 Tbl Shrimp and Crab Boil seasoning for about 15 mins. Drain and set aside liquid.
Cook hamburger in oil until no longer pink. Add onion, celery, bell pepper and garlic; cook until onion is transparent. Add eggplant and shrimp stock and cook until eggplant can be mashed down. Ad more water if necessary.
Add shrimp and parsley and cook until shrimp are pink and done. Season to taste. Add rice, cover and simmer until liquid is absorbed. If you desire, you may add one link sausage to hamburger while cooking.
---reduce the amount of crab boil if you don't like spicy!!!
