     Coleen's Carrot Cake

2 C flour
2 tsp cinnamon
2 C sugar
1 1/4 C oil
2 tsp baking soda
1 tsp salt
4 eggs
2 C grated carrots
1 (8 oz) pkg of cream cheese
1 box of confectioner's sugar
1 stick oleo (margarine)
1 C chopped nuts

Sift together dry ingredients. Mix eggs, oil and carrots together. Add in dry ingredients. Beat by hand until all is mixed together.
Pour into 2 cake layer pans. Bake at 350 for 45 mins. Let cool.
Icing: Cream together cream cheese and oleo. Add sugar gradually. Spread on cooled cake. Sprinkle with nuts.
