     Potato-Apple Pancakes

Ingredients
1 pkg.(1.4 lbs.) refrigerated uncooked shredded
hashbrown potatoes
3 Granny Smith apples, grated
1/2 cup flour
2 eggs
2 Tbs. sugar
1/2 cup chopped onions
1 1/2 tsp. salt
1 cup canola oil
 
sour cream, optional

Instructions
In large bowl combine potatoes, apples and flour in small bowl beat eggs with sugar, onions and salt; stir into potato mixture.
In nonstick skillet heat oil over medium-high heat. Drop 1/4 cupfuls of mixture, in batches, into skillet; cook, turning once until golden, 2-3 minutes per side. Drain on rack. If desired, serve with sour cream.
20 servings-calories 80-protein 2g-fat 2g-chol 21 mg-carbs 13g- sodium 202mg-fiber 1g-sugar 4g.
This is easy to cut down. I use nonstick fry pan and use much less oil.
