1 Red Pepper Diced
|

3 Eggs

1 Cup Shredded Parmesan Cheese

1 Tbsp of a mix of Oregano, Basil and Thyme

3 Tbsp Extra Virgin Olive Oil
|
|
Salt and Pepper

Instructions |

|
Preheat oven to 200 degrees
|
|
|
Combine potato and pepper.
|
|
|
In another bowl, combine egg, cheese, herbs, salt and pepper. Add in the potato-pepper mixture.

In a skillet, spoon a quarter of the mixture, flatten with a spatula and fry for 2-3 minutes.
