     Hawaiian Chicken

Ingredients
2 1/2 to 3 lbs chicken (breasts, thight or drumsticks)
1/2 cup flour
2 Tbsp. oil
1 can sliced pineapple (save juice)
1/4 cup soy sauce
1/4 cup catsup
2 Tbsp. honey
1 bell pepper, chopped
1/4 onions, chopped
 
1-2 cup chopped mushrooms

Instructions
Coat chicken in flour, add 2 Tbsp. oil to skilet; fry until light brown on both sies. Drain pineapple; save juice. Mix 1/2 cup pineapple juice, soy sauce, catsup and honey. Pour mixture over chicken. Cover and simmer for 15 minutes. Turn chicken, add pineapple, bell pepper, mushrooms, & onion Simmer 15 minutes more until chicken is tender.
Serving Suggestions
Serve with steamed whit/brown rice - Yum!
