Unroll pastry onto ungreased 15"x10"x1" baking sheet. Combine sugar and cinnamon; sprinkle over pastry. Prick with fork. Bake at 400 degrees for 10-12 minutes until lightly browned. Cool on wire rack for 5 minutes.
Palce pastry in plastic bage and crush. Transfer to bowl and roll ice cream in pastry crumbs. Cover and freeze for 2 hours.
Deep fry ice cream 8-10 seconds until golden. Drain on paper towels. Drizzle with honey and serve.
