8-oz. can unsweetened crushed pineapple, undrained
6-oz. can unsweetened pineapple juice
1 orange, peeled and chopped
1 banana, peeled and chopped
3/4 cup chopped pecans or almonds (optional)
3 tbsp. honey
Instructions
In small saucepan, whisk gelatin into juice to
soften and let stand 5 minutes.
Meanwhile, mix together in mixing bowl: fruit,
juice, and nuts.
Heat gelatin mixture over medium heat, stirring
constantly until dissolved. Remove from heat and
blend in the honey.
Whisk gelatin mixture into remaining ingredients.
Pour into 8" or 9" square pan or 9" x 13" pan;
chill until set.
Cut into squares for individual servings and
garnish as desired with mint leaves, whole
strawberries, yogurt-sour cream topping (half
plain yogurt and half sour cream).
