     mince stroganoff with turmeric rice

Ingredients
1 cup frozen peas,corn and carrot mix
1 cup frozen broad beans
1 teaspoon olive oil
1 onion, finely chopped
500g beef mince
40g packet french onion soup
1 cup skim milk
250g carton light sour cream
 
TURMERIC RICE
2 cups long grain rice
1 litre (4 cups) water
pinch ground turmeric

Instructions
to make turmeric rice, combine rice water and turmeric in a medium saucepan and simmer, cover and cook over a very low heat for 12 minutes, or until water is absorbed. remove from heat. stand, covered, for 5 minutes. use a fork to gently seperate grains.
meanwhile, boil,steam or microwave peas,corn,carrot and broad beans until tender. drain. peel and discard the outer shells of broad beans.
heat oil in a large saucepan. add onion, cook, stirring occasionally, until soft. add mince. cook, over a medium heat, stirring occasionally, for 8 minutes, or until cooked through. add soup mix and milk. bring to boil and reduce heat to low. add cream and half the combined vegetables. stir until heated through. do not boil.
Serving Suggestions
serve mince over the rice and top with remaining vegetables
