     Creamy Banana Pie

Ingredients
2 1/4cups ginger biscuits
5tbsp butter melted
1/2tsp fresh grated nutmeg
1 banana
1 1/2cups fromage frais variation mascapone cheese
3tbsp natural yoghurt or creme fraiche
3tbsp dark rum or brandy none alcoholic 1tsp vanilla essence
 
TOPPING
1cup whipping or double cream
3-4 bananas

Instructions
Preheat the oven to 190c/gas mark 5. For the crust combine the crushed biscuits with the butter & spice. Mix throughly with a wooden spoon. Press the biscuit mixture into a 9in pie dish. Building up thick sides with a neat edge. Bake for 5mins, then leave to cool.
Beat the mashed bananas with the cheese. Fold int the yoghurt/creme fraiche & vanilla essence. Spread the filling in the biscuit case. Chill for at least 4 hours or overnight.
For the topping. Whip the cream until soft peaks form. Spread on the pie filling. Slice the bananas & decorate the pie.
Serving Suggestions
Do not arrange the bananas on top until ready to serve
