     Banana Bread Pudding

1 stick butter
4 bananas
6 tbl. light brown sugar
2/3 cup milk
1 cup heavy cream
2 eggs plus 1 egg yolk
1/3 cup sugar plus 1 tbl.
1/8 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
6 slices firm white bread

Preheat oven 325˚. Using 1 tbl. butter, butter 9" deep dish pie plate and one side of 12" square of foil, set aside. Cook bananas with 4 tbl. butter in medium skillet over medium-high heat until golden. Sprinkle 2 tbl. brown sugar and cook until sugar melts and coats bananas, set aside.
Beat milk, cream, eggs, yolk, 1/3 cup sugar, salt, nutmeg, cinnamon and remaining 4 tbl. brown sugar together. Brush bread with remaining butter, cut each slice in half, layer in the pie dish. Tuck bananas between the slices. Pour in the milk mixture. Press to absorb the liquid. Cover with foil, bake 30 minutes. Remove foil, sprinkle with remaining tbl. sugar, bake uncovered until golden brown, additional 25 minutes. Cool on wire rack.
