Black eyed pea soup

Ingredients
-
5 slices bacon
-
1 cup chopped onion
-
2 tbsp finely chopped jalapeno
-
2 cups chopped tomatoes (or Rotel)
-
1 clove minced garlic
-
salt & pepper
-
3 cups water
-
2 beef bouillon cubes (or chicken)
 
-
4 cans black eyed peas
-
3 cups cheddar or swiss cheese

Instructions
Saute bacon, cut in small pieces, and all ingredients through salt & pepper. Add water, bouillon, and drained black eyed peas. Heat through.
Sprinkle cheese on each serving.
