Mix the romaine and watercress in a medium salad bowl. Whish together the marmalade, mustard, and vinegar, then whisk in evoo. Pour dressing over the salad and season with slat and pepper. toss, then adjust seasonings. Mound greens alongside the bourbon chicken and serve.
