Heat oven to 350 degrees. Grease bottom and sides of 2 round pans, with shortening; lightly flour. Mix nuts, dates, orange juice, water, and baking soda; set aside. Mix flour, cinnamon, and salt; set aside. Beat butter and sugar in medium bowl with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in vanilla and eggs until blended. Gradually beat in the flour mixture, scraping bowl frequently, until blended. stir in date mixture until blended. Pour into pans.
Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire rack. Cool completely. Fill layers and frost side and top of cake with cream cheese frosting. Store covered in refrigerator.
Cream Cheese Frosting: Beat cream cheese, butter, 2 tsp of milk, and the vanilla in medium bowl on low speed until smooth. Beat in powdered sugar, 1 cup at a time, until smooth and spreadable. (Beat in additional 1 tsp milk if needed)
