#2 can whole tomatoes (you may substitute small can of tomato paste)
2 hot or red peppers
2-3 quarts of water
6-8 green onions, chopped fine
4 or 5 celery stalks with leaves
3 cloves garlic, crushed
1/4 green pepper, chopped
1/2 lb okra
2 tablespoons parsley
Salt and pepper to taste
Instructions
Fry 6-8 slices of bacon slowly. Remove bacon from the pan. Brown 3/4 cup flour in bacon fat. Sear onions in flour. Add tomatoes, then celery. Add water, onions, garlic, peppers, parsley, salt and pepper.
Simmer for 1 hour. Add crab, shrimp or ham and cook for additional 20 minutes. (Note: If cooked too long, crab will be mushy) If crab is precooked, cook only 5 minutes, not 20.
Crumble in bacon.
Add okra.
