Add honey, oil and salt to hot water. Add yeast and wait until mixture bubbles.

Sprinkle gluten over mixture and mix. Add flour to make a sticky dough. Exact flour needed will vary depending on flour, humidity, etc. Beat on good quality mixture until texture changes to smooth and elastic. This is vital!

Shape into 2 loaves with oiled hands. Place in 9 inch bread pans and set in a very slow oven (heat to 170 degrees and turn off before putting loaves in) and let rise until dough comes just above tops of pans. Remove from oven and preheat to 350 degrees while bread continues to rise.

Bake for 23 minutes and turn out onto a rack covered with a cotton towel. Wait as long as your self-control allows and then slice and enjoy!
