Saute 3/4 cup onions in 2 TB of butter stir in
1 TB flour with salt and pepper.
Saute till just starts to brown and gradually add 1.5c milk until blended.

Simmer about 12 minutes to thicken.
Set aside to cool enough to add eggs without curdling
Whisk 2 eggs
|

|
Stir 2 cups of cool rice 1c feta and 1 pkg. thawed and drained spinach. add whisked eggs.
|
|
|
Pour into a sprayed 9 inch pie plate
Sprinkle top with parm cheese and cook 35 mins. broil 2 mins to brown the top.
